Gingerbread Men :
1 cup butter softened
1 cup sugar
2 to 4 tablespoons ginger
2 teaspoons nutmeg
1/8 teaspoon cinnamon
1/8 teaspoon salt
1 cup evaporated
1 cup dark molasses
1 teaspoon vanilla
1/2 teaspoon lemon extract
5 1/2 cups sifted flour
In large bowl, Cream butter. Add sugar, spices and salt. Cream until light and fluffy. Stir in evaporated milk, molasses, vanilla and lemon extract. Add flour a little at a time blending well after each addition. Cover bowl with waxed paper and chill for at least two hours.
Use a portion of the chilled dough at a time. Roll about 1/4 inch thick on well-floured surface. Cut with floured cookie cutter to make gingerbread men. Using a spatula, transfer to an ungreased baking sheet. Bake in 325 degree F oven for 10 to 15 minutes. Cool on rack. Decorate with icing. Makes 2 1/2 dozen large gingerbread men.
